The Vernaccia di San Gimignano is a white wine, produced in a small Tuscan area between Siena, Pisa and Florence, close with the San Gimignano territory, which is famous all around the word. It is controlled and guaranteed by the Denominazione di Origine Controllata e garantita (DOCG) mark. It has been the first wine to receive the Denominazione di Origine Controllata (DOC) certification. In 1966 and in 1993 was named also DOCG.

Microclimate:

Typical mediterranean climate with rainfall in April, May and November. Temperature between -5°C +37°C

Production technique:

Vernaccia grapes are hand harvested on the first week of October, the bunches are softly pressed and the juice is immediately separate from the skin and racked, part in temperature control steel tanks and part in 2/3rd passage French barriques where it ferments for two weeks. At the end of alcoholic fermentation the wine is blended in a clean steel tank where it mature for at least 12 months. At the end of the ageing period the wine is bottled and fined further 3 months in bottle before release it

Organoleptic features:

Straw yellow, intense and balsamic at the nose, mint and ripe apricots with a note of vanilla. Medium bodied and fresh, quite complex and austere at the taste

Coupling:

A perfect match with white meats, lobster or fresh Tuscan pecorino cheese
